A quick and attractive way to serve herring. Serve with boiled new potatoes and freshly cooked vegetables.

1 medium zucchini, cut in thin strips
1 Lemon, thinly sliced
1 large carrot, peeled & cut into very thin strips
4 ounces (120 g) of button mushrooms, sliced
4 six ounce (175g) fish fillets such as snapper or other white fish
1/4 cup (60ml) of dry white wine
Freshly ground pepper

Preheat oven to 400F (200C). Cut 4 rectangles of parchment paper or foil large enough to wrap around each fish fillet.

Divide half the zucchini, lemon, carrot and mushrooms among the rectangles.

Lay a fish filet on top of each portion and scatter the remaining veggies and lemon over the top.

Sprinkle each with the wine and season with salt & pepper to your taste

Fold the edges to seal each package tightly. Place packages on a baking sheet.

Bake 10 to 15 minutes. Serve at the table in the packages for everyone to open. Makes 4 servings.
