This is a 'war time' recipe. When things were rationed. Out of just about everything in your kitchen but want a treat. Then this is the recipe for you. About the only thing you might have to buy are the currants & dates. I always have them but not everyone does.
Ingredients.....
1/2 cup of currants
1 cup of water
2 tablespoons of shortening
1/2 cup of dates (or you can substitute with raisins)
1 cup of brown sugar
1 tablespoon of cinnamon
1/2 teaspoon of nutmeg
1 teaspoon of baking SODA
1 & 1/2 cups of all purpose flour
1/2 teaspoon of baking POWDER
- boil the following for 3 minutes... 1/2 cups of currants, 1 cup of water, 2 tablespoons of shortening, 1/2 cup of dates, 1 cup of brown sugar, 1 tablespoon of cinnamon and the 1/2 teaspoon of nutmeg.
- Remove from heat and add 1 teaspoon of baking SODA (mix it in a little water first), 1 & 1/2 cups of flour & the 1/2 teaspoon of baking POWDER.
- Bake at 350 degrees in a loaf pan. check it in 20 minutes.
