4 loin pork chops, bone in (2 lbs)
1/2 teaspoon of salt
1/8 teaspoon of dried marjoram
1/8 teaspoon of dried thyme
1/8 teaspoon of dried sage
3/4 cup of chicken broth
1/2 teaspoon of grated orange rind
1/8 teaspoon of ground ginger
Preheat the oven to 300 degrees F.
Cut off fat around the outside of all the chops!
Over medium heat partially cook some of the fat pieces in a heavy frying pan until there is about a tablespoon of liquid fat in the pan. Discard the rest of the fat.
Combine the salt, marjoram, thyme, and sage. Sprinkle it on both sides of the chops and press into them with your fingers.
Brown the chops on both sides in the frying pan, turning twice.
Transfer to a shallow casserole.
Combine the chicken broth, orange rind, and ginger; pour this over the chops.
Cover the casserole and bake for 45 minutes, uncovering the last 5 minutes of cooking.
