" ROASTED VEGGIES "

This one is pretty basic and simple and roasted veggies accompany anything from a chicken to a roast of beef.

Ingredients.....

3-4 potatoes - cut in bite size chunky pieces
8 carrots - cut in 1 1/2 inch pieces
6-8 onions - quartered then quartered again (chunks)
vegetable oil

make sure the veggies are dry. Get a large foil pan (something the size of a large lasagna pan) and toss all the cut veggies in. Drizzle some oil over them. Time to get messy again, reach in and begin to toss the veggies to be sure they are all coated with the oil.

If there is oil sitting in the bottom try to absorb it up with some paper towels. You don't want a puddle in there.

bake at 350 degree's for an hour and a half. You can give them a stir about half way through. Near the end I put the broiler on for about 5 minutes and it finishes browning them. These are wonderful.
