Ingredients...
2 teaspoons of margarine
1 cup of sliced apples
1/2 a teaspoon of ground cinnamon
2 center-cut pork chops, 1/2 inch thick, well trimmed of all fat
1/4 teaspoon of salt
1/4 teaspoon of freshly ground pepper
Melt the margarine in a large nonstick frying pan; saute the apples until they are tender but not mushy. Sprinkle them with the cinnamon.
Push the apples to one side or remove them to a serving plate.
Fry the pork chops in the liquid from the apples until they are almost cooked, turning them to brown both sides. Sprinkle with the salt & pepper.
Cook until the chops are done. Don't overcook as chops will become rubbery.
Arrange the chops on a plate each and serve the apples over them.
= makes 2 servings
1 serving = 1 pork chops plus 1/2 cup of the apples.
= 2 meat exchanges plus a 1/2 of a fruit exchange
