Give friends and family a special treat by baking a batch of delicious home-made cookies. You can make and freeze them three weeks ahead.
Ingredients.....
2 eggs whites
1/2 cup of sugar
1 tablespoon ground cinnamon
2 cups of ground almonds
powdered sugar
1. Preheat the oven to 325F and lightly grease 2 cookie sheets with a flavorless oil.
2. Whisk eggs whites in a bowl with a hand-held beater until they hold stiff peaks. Stir in sugar, cinnamon and almonds until an even color. With wetted hands, form the resulting soft paste into 1 1/2 inch balls (add a little extra cinnamon if too soft to handle) and arrange an inch apart on the cookie sheets.
3. Bake for 20 minutes until just dry to the touch then take out, cool for 5 minutes then toss in a bowl of powdered sugar. Toss in powdered sugar again when cold. Store in an airtight container.
