Delicious cold for picnics or on a buffet.


1 two & a half (2 1/2) pound frying chicken, cut into pieces
1 teaspoon of salt
1/4 teaspoon of freshly ground pepper
1/4 teaspoon of garlic powder or 1 clove of fresh garlice, minced
1 teaspoon of dried basil
1/3 cup of FRESH lemon juice
1/4 cup of water
3 - 4 thin slices of lemon for a garnish

Preheat your oven to 400 degrees F.

Sprinkle chicken pieces with salt, pepper and garlic powder.

Place the pieces in a shallow baking pan with skin side down.

Combine the remaining ingredients, except lemon slices and pour it over the chicken.

Bake, uncovered, for 20 minutes. Turn chicken and baste with pan drippings.

Bake for 30-40 minutes more, until the chicken is tender.

Serve on a platter garnished with the lemon slices.

Makes 4 servings
One serving = 1 leg & thigh or 1/2 breast and a wing
