This recipe is not all that low in fat due to the hamburger but if you rinse it a bit under very hot water and use lean ground beef it will help reduce the fat content in it.


1 lb of lean or extra lean ground beef
2 cloves garlic
medium onion minced
1/4 teaspoon cayenne pepper
2 tablespoon Ketchup
2 tablespoons of BBQ Sauce of your choice
Black Pepper to taste
Salt to taste (if you use salt)
1 - 14 oz can of tomatoes drained reserve the juice
Bell peppers (colour and amount to own taste)
2 cups of liquid (use all of the drained tomato juice and add water or beef broth to make up the difference)
2 cups of instant rice

Brown ground beef and drain of excess fat (rinse under very hot water to get rid of more of the grease).

Add garlic and onion and cook until onion is translucent. Then add Ketchup and BBQ sauce.

Cook for two minutes to let the sauces fuse with the meat. Add spices and cook two more minutes then add the rest of the ingredients except the rice.

Cook until the tomatoes and peppers are tender and the liquid is simmering well.

Add the rice and stir into the mixture. Cover, remove from heat and let stand for five full minutes without lifting lid. If your pot doesn't have a lid seal it well with foil.

This recipe takes less than a 1/2 hour to prepare and cook and it reheats well too.
