2 pounds of lean round steak
1/2 cup of all purpose flour
2 teaspoons of salt
2 teaspoons of paprika
1/2 teaspoon of freshly ground pepper
3 tablespoons of vegetable oil
1 cup of chopped onion
1/2 cup of chopped green pepper
1 sixteen(16) ounce can of tomatoes
1/2 cup of raw rice
1 cup of condensed beef broth
1 cup of water

Cut the steak into seven equal serving pieces. Mix the flour, salt, paprika and pepper; dredge the meat in the flour mixture.

Heat the oil in a large frying pan.

Lightly brown the onions and peppers and remove them from the oil.

Brown the meat in the remaining oil. Cover the meat with the onions and green peppers.

Cut up the tomatoes and add with their liquid to the meat.

Sprinkle the rice into the pan; add broth and water. MIX THOROUGHLY.

Bring this to a boil, then lower the heat, and cover tightly. Simmer for 1 and a 1/2 hours or until the meat is tender, stirring occasionally.

Serves 7 - One serving = 3 ounces of meat plus 1/2 cup of rice mixture.

*NOTE* Low sodium diets; Omit the salt and use unsalted canned tomatoes and beef broth.
