These are great. Double or triple this recipe because you won't be able to keep them in the house. I make these for the holidays and put a 1/2 dozen in a little cello bag tied with a pretty ribbon and stick them in baskets of goodies I make. This has become a tradition for me, these goodie baskets. They are fast to make and you can reduce the cost by purchasing the coconut in quantity at a bulk store.
This recipe can be altered for flavour. If you want the taste of original coconut macaroon's use the 'almond' flavouring. If you want something a bit different use 'vanilla'. Both are scrumptous. And fattening. lol
Ingredients.....
1 & 1/3 cup of flaked coconut
1/3 cup of sugar
3 Tablespoons of flour
1/8 teaspoon of salt
2 egg whites
1/2 teaspoon of almond (or vanilla for a different taste) extract
Combine coconut, sugar, flour and salt in mixing bowl.
Stir in egg whites and almond extract; mix well.
Drop from teaspoon onto lightly greased baking sheets.
Bake at 325 for 20 to 25 min., or until edges of cookies are golden brown.
Remove from baking sheets immediately.
Makes about 18 cookies.
