This makes a nice size family meal. It's healthy and if you skin the chicken, low in fat. I was puttering in the kitchen again.. lol
2 & 1/4 cups of water
2 chicken bouillon cubes or packages of chicken bovril
2 tablespoons of tomato paste
2 cups of chopped onions
1 tablespoon plus a teaspoon of paprika
2 cups (dry) of bow-tie macaroni (or shape of your choice)
8 chicken thighs (skinned)
- put water and bouillon cubes in a 4 quart (large) pot over high heat.
- while the liquid comes to a boil, stir in the onions, tomato paste and paprika.
- when the liquid gets to a boil, stir in pasta, and pull off chicken skin with a paper towel (skin will be easier to handle). Add the chicken.
- reduce the heat to low. Cover and simmer 35-40 minutes until the chicken is tender & no longer pink in the center.
