Who doesn't love the sweetness and smoothness of butterscotch? Here is a great old fashioned recipe for butterscotch drops. You will need a candy thermometer for this recipe. These can also be put in a nicely decorated small canning jar and given as gifts.
2 cups (500 ml) dark brown sugar
1/4 cup (60 ml) molasses (treacle)
1/2 cup (125 ml) butter
2 Tablespoons (30 ml) water
2 Tablespoons (30 ml) cider vinegar
Combine all the ingredients in a saucepan and bring to a boil over moderate heat, stirring to dissolve the sugar.
Boil until the mixture reaches the hard-crack stage, 300F (180C). You must keep an eye on the temperature. If it's below or above you will reach a different stage.
Drop from a teaspoon onto lightly buttered aluminum foil or a marble slab and allow to cool.
Makes about 1 pound (450 g).
