This is an authentic recipe.
1 Chicken breast per person
1 Large potato per person - peeled & quartered
2 Large onions - sliced as desired
2 Whole tomatoes (fresh or canned)
1/4 cup of canola oil or vegetable oil
2 cloves of garlic mashed & chopped (adjust to your own taste)
Salt & Pepper to taste
Pour oil in bottom of baking pan.
Place 1 sliced onion in the pan and arrange potatoes over onions and season with salt and pepper -
cover with the other sliced onion and garlic.
Place chicken breasts over the onions.
Mash tomatoes and pour over chicken breast.
Cover with foil and bake at 350 degrees F for one hour and uncover and let brown for 15 minutes.
Serve with a garden salad and bread of choice. You can always make some great garlic butter for it.
