1 cup of All-Bran cereal
2/3 cup of skim milk
1/2 cup of sifted all purpose flour
1 & 1/2 teaspoons of baking powder
1/4 cup of sugar
1 medium egg, beaten
2 tablespoons of vegetable oil

Preheat the oven to 400 degrees F.

Prepare nine 2 inch muffin cups with vegetable pan -coating or line themwith paper baking cups.

Combine the bran cereal and milk.

Sift together the flour, baking power, salt and sugar.

Combine the beaten egg and vegetable oil; add to the bran and milk; mix these well.

Add the dry ingredients all at once and stir (do not beat) just enough to mix.

Measure 3 scant tablespoonfuls of batter into each of teh nine prepared muffin cups.

Bake 25-30 minutes. Cool 5 minutes tehn turn out of pans.

Makes 9 muffins
1 serving = 1 muffin
1 serving = 1 starch & 1/2 fat

mg sodium = 287

If you would like to make Raisin Bran Muffins simply add 1/4 cup of seedless raisins to the dry ingredients in the bran muffin recipe. Serving size stays the same but there are some nutritive value changes and are as follows:

g carbohydrate = 17
g dietary fiber = 3.4
g fat - total = 4
mg cholestrol = 31
mg sodium = 287
