I love these things..
2 large potatoes
1 tablespoon of vegetable oil
1/2 teaspoon of salt
1/8 teaspoon of paprika
Preheat your oven to 450 F. Peel the potatoes and cut them into slices 4 inches long and 1/4 inch wide; place them in a bowl of iced water to crisp.
Just before cooking, turn them onto paper towels and pat them dry.
Spread the pieces in one layer on a shallow baking pan. Sprinkle them with the vegetable oil.
Shake the pan to spread oil evenly over the potatoes.
Bake 30-40 minutes, turning them frequently, until the are golden brown.
Empty the potatoes onto paper towels. Sprinkle with the salt and paprika.
= 5 servings (yeild; 50 - 60 pieces)
1 serving = 10 - 12 pieces.
1 serving = 1 starch and 1/2 a fat
