This one is pretty basic and simple and baked carrots accompany anything from a chicken to a roast of beef, to a round of pork.


8-10 carrots - cut in 1 1/2 inch pieces
vegetable oil

Peel and make sure the carrots are dry. Get a large foil pan (something the size of a small lasagna pan) and toss all the cut carrots in. Drizzle (not much is needed) some oil over them. Time to get messy, reach in and begin to toss the veggies to be sure they are all coated with the oil.

If there is oil sitting in the bottom try to absorb it up with some paper towels. You don't want a puddle in there.

bake at 350 degree's for an hour and a half. You can give them a stir about half way through. These are wonderful.
